David's Goulash

 

Goulash is a dish that originated in Hungarian, but is now a favourite in many countries.

 

Goulash is cooked in a very thick sweet sauce, This meal is not a spicy one.

 

Ingredients:

 

  • 1kg of lean stewing beef
  • 500g onions
  • 400g sliced tomatoes
  • 30g Plain flour
  • 60ml paprika pepper
  • 300 ml water
  • 2 beef stock cubes.
  • 50ml oil.
  • small carton natural yoghurt


  • pickled cucumbers or gherkins as a garnish
  • boiled rice

 

Method:

 

Cut the beef into 2cm squares, trimming any excess fat.

Slice the onions, and cut the tomatoes into slices about 5mm thick.

Put the flour paprika pepper and some salt and pepper into a bowl and blend together.

Mix the water and stock cubes, put to one side.

Put the oil into a large frying pan, and heat

Coat the meats with the flour mix and drop into the hot oil.

keep stirring the meat so that it does not stick. Slowly add the stock, stirring so that the flour mix joins with the stock to make a smooth sauce.

Gradually bring to the boil while the sauce thickens. If it gets too thick make and add a little more stock.

Once boiled reduce the heat and add the onions and tomatoes.

Cover and simmer for 2 hours. Check on the meal occasionally, stirring and adding more stock if the sauce evaporates too fast.

When cooked pour into a large serving bowl, top with the yoghurt.

Traditionally garnished with pickled cucumbers or gherkins.

 

Serve with boiled rice and a salad.
