This is a quick and easy dish to make, and scales very easily for larger groups of people.

Method
Pour 20cc of red wine into a glass and sip gently. Chop the onions and garlic and brown in a large flame proof casserole. Sip some wine. Remove the onions from the casserole and melt the butter with the olive oil, then add the chicken pieces and brown for 5 - 10 minutes until well coloured on all sides. Have a sip of wine. Add 50cc of the red wine, the mushrooms and simmer for 10 minutes. Add the tomato frito, chopped tomatoes, onions and garlic to the casserole. stir gently and simmer for at least 30 minutes, until you are ready to eat. Add seasoning to taste. Sip some red wine.
Serve with pasta or rice.
