Spicy Tomato Soup

 

This is a nice warming starter for cold evenings.

 

Although you can use packet or canned soups, it only takes an extra 5 minutes to make your own soup.

 

Ingredients:

 

  • 500g of peeled and finely chopped tomatoes
  • 400g of tomato frito
  • 500ml of vegetable stock
  • 10ml of Tabasco sauce

 

Method:

 

Put all the tomatoes and tomato frito into a pan and mix together, then cook slowly over a medium heat, add the vegetable stock until you get the desired thickness. Add the Tabasco sauce until the soup is spicy, but does not burn the tongue.

 

The above method produces a smooth soup.

You can make a country vegetable soup by adding chopped onion, and a cup of mixed chopped vegetables, leave this to cook for long enough to ensure the vegetables are cooked through.

 

Serve with warm crunchy bread.
