Volcano's

 

We and a lot of our friends like spicy foods, so I decided to develop a hot starter that was a bit of fun as well.

 

I was looking for something that was quick and easy, and that would not need a lot of different ingredients. What I came up with was a simple dish using mashed potatoes and some left over chilli that I had in the fridge.

 

Ingredients:

 

 

  • About 400gms potatoes per person

 

Method:

 

Peel and boil the potatoes.

When soft drain and mash with some butter. This needs to be a stiff mixture, so do not add too much butter or any milk.

For cooking you need a flat non stick tray that will fit in the oven.

When cool enough to handle, shape the potato mixture into volcano shapes about 6-8cms in diameter and 5cms high. Scoop out the middle leaving a layer of potato at the bottom.

Fill the hollows with the chilli mixture.

 

Place in a hot oven (170C) for 15-20 minutes until the mixture is hot, and the potatoes browned (if the potatoes are not browning place under a hot grill for a few seconds)

 

Allow 1 volcano per person, as they are quite filling.

 

You can have these with either a mild chilli or very hot, adjust the chilli mix to taste.
